Your cutting board will last for years with proper care and conditioning.
HAND WASH both sides of the cutting board evenly with warm water and mild soap. Never submerge your cutting board in water or place in a dishwasher because water causes cutting boards to warp and crack. Avoid harsh dish detergent as this strips the oil. Wipe the cutting board dry with a clean cloth and stand the board up on edge so that both the top and underside are fully exposed to air flow to dry.
OIL YOUR BOARD with a generous layer of food-grade oil (we recommend butcher block oil) to both sides, top, bottom, and any groove following instructions on the oil bottle. Apply additional oil to visibly dry spots. Leave the board sitting on its edge overnight so the oil can dry. This important step helps repel food particles and liquids as well as staining, cracking, and warping. We recommend oiling when the board starts to look dried out.
AVOID vegetable or nut-based oil for the simple reason that it will spoil and become rancid. This will leave your wood cutting board with an unpleasant smell and change the taste of foods in contact.
OPTIONAL: After the oil has had enough time to soak into the grain, you can apply a food-grade wax such as butcher block wax. If you prefer a natural alternative, beeswax-based products are safe options and smell fantastic! This creates an extra barrier to help the wood retain moisture.
DISINFECT & deodorize using vinegar. We recommend keeping a spray bottle of vinegar handy to disinfect & deodorize your wood cutting board. Acetic acid (white vinegar) is an excellent disinfectant for E. coli, Salmonella and other household bacteria. Spray vinegar on the wood cutting board, let sit for a few minutes, then wipe it with a warm damp cloth.
REMOVE STAINS & deodorize with baking soda. Combine 2 tablespoons of baking soda, 1 tablespoon of salt and 3 tablespoons warm water to create a non-toxic cleaning agent. Mix these ingredients together and scrub the entire surface of the cutting board. Finally, wipe it with a warm wet cloth and dry with a dish towel. (Do not use this mixture on any epoxy components as it is abrasive and will scratch)
CLEAN with coarse salt and lemon. For an all-natural clean, first try dampening the wood cutting board with a warm cloth and sprinkling coarse salt over it. Cut a lemon in half and scour the cut side of the lemon over the board while slightly squeezing the lemon juice out. Let it stand for five minutes and use a scrub brush to remove the excess. You may need to oil after this process as salts are drying. (Do not use this mixture on any epoxy components as it is abrasive and will scratch)
WARPING may happen as wood expands and contracts. The best way to prevent this from happening is to keep your cutting board dry and frequently oil your board with a generous layer of food-grade oil. Unfortunately, even a perfectly maintained board can warp due to several factors such as humidity, how long the timber was seasoned, or the type of wood. If your board warps, you can wet it, towel off excess water, put it on a known flat surface, and lay a heavy object on it to help flatten it as it dries.
